Ingredients:

  • 1 kilo of beef (preferably brisket or rump), cut into pieces

  • 2 units of large onions, julienned

  • 4 units of ripe tomatoes, diced

  • 3 cloves garlic, finely chopped

  • 1 de red pepper, cut into strips

  • 2 de large potatoes, peeled and cut into cubes

  • 2 coup of meat broth or water

  • 1 splash of Cooking oil

  • 1 pinch of Salt and pepper to taste

  • 1 pinch of Cumin to taste

  • 1 ramillete de Fresh cilantro, chopped (optional, to decorate)

Instructions

  • In a large pot or deep saucepan, heat some oil over medium-high heat.
  • Add the beef and sear on all sides until well seared. Remove the meat and reserve.
  • In the same pot, add a little more oil if necessary and reduce the heat to medium. Add the onions and garlic, and sauté until translucent and fragrant.
  • Add the chopped tomatoes and red pepper, and cook for a few minutes until the tomatoes soften.
  • Add the reserved meat back to the pot and mix with the vegetables.
  • Add the carrots and potatoes cut into cubes, and mix well.
  • Pour the meat broth or water into the pot, enough to cover all the ingredients. Adjust the amount of liquid according to your sweat thickness preference.
  • Season with salt, pepper and cumin to taste. Stir to distribute the seasonings well.
  • Cover the pot and cook over medium-low heat for about 30-40 minutes, or until the meat is tender and the vegetables are cooked.
  • Once ready, remove from heat and let sit for a few minutes before serving.
  • Serve the meat sudado hot, accompanied by white rice or arepas, and decorate with fresh chopped cilantro if you wish.
